What to expect at the Singapore Wine Fiesta? First things first: Unlimited wine tastings.
So, we hope you’ve got space for all that wine and more – six renowned Singapore-based chefs will be whipping up a menu of gastronomic delights, specially curated to complement the wines on showcase.
At Morsels, you’ll appreciate the ingenuity of Chef Petrina Loh as much as you will the food, fusion fare that borrows from a myriad of flavours and cultures. And they’re bringing Morsels’ signatures to this year’s Wine Fiesta, including the Steamed Venus Clams ($15), prepared in a nourishing Chinese-inspired fig broth with homemade kimchi and pickled wakame.
PAIR IT WITH: Max Ferdinand Richter Mulheimer Sonnenlay Zeppelin 2016, from Mosel, Germany, an off-dry white with citrus and floral notes. Team Red? Try the Poderi Crisci Reserva Merlot 2012 from Waiheke Island, New Zealand.
This American barbecue smokehouse has got the real flavour of the South: Memphis Style Pork Ribs ($15), Pastrami Burnt Ends ($20) and more smoked with its specially imported Southern Pride smokers. And although Chef Andrew Baldus likes to bend the rules of cooking into his own, we’d like to believe there is a rule to eating: That it’s never complete without a good drink to go with.
PAIR IT WITH: Complete the backyard BBQ vibes with a velvety Rutherford Hill Cabernet Sauvignon 2013. It’s been said that the Rutherford appellation has some of the best Cabernet Sauvignon in USA’s Napa Valley!
Chef Drew Nocente unapologetically allows his Italian-Australian roots to lead the culinary direction at Salted & Hung, and there’s everything to love about the menu: a luscious array of cuts prepared with traditional curing and grilling methods to maintain the integrity of flavours. Start with the Charcuterie, Coppa, Salami & Duck Rillette ($15), and end off on a sweet note with their Burnt Pavlova ($10).
PAIR IT WITH: Australian wines from some of the most renowned wineries from down under. Woodstock Little Miss Collett Moscato 2015 from McLaren Vale or Kaesler Bogan Shiraz 2014 from Barossa Valley. The Aussies have more than just wine, too – clink your glasses of Applewood Distillery Gin from Adelaide Hills.
Monti’s Chef Felix Chong has years of specialisation in Italian cuisine under his belt, including experience at the 3 Michelin-starred Otto e Mezzo in Hong Kong. Be blown away by classic Italian fare inspired by fresh produce, like the decadent Truffle Risotto tossed in a Parmigiana Wheel ($10).
PAIR IT WITH: The stellar G.D. Vajra Barolo Albe 2013 from Italy, cultivated from grapes grown in the vineyards of Vergne, the highest village of Barolo in northwest Italy. The elevated growing conditions means the time for harvest arrives a little later, but possess an innate elegance as a result.
Grandma knows best, so expect nothing but the best from Maggie Joan’s, whose menu is inspired by Chef Oliver Hyde’s Greek grandmother (who was herself a chef!). On the menu specially curated for the Wine Fiesta: Salmon Tartare Taco ($10), Fried Chicken Pita with Green Harissa and Pecorino ($15) and more.
PAIR IT WITH: Rosé all day! One pink palate-pleaser you’ll love: the AIX Rosé 2016 from Coteau d’Aix en Provence, France, with youthful notes of watermelon, strawberries and flowers.
The folks who are bringing the beats to the party are also bringing their eats. Tuck into Kilo’s fusion fare like Grilled Prawn with Tostones ($12) or Sambal Stingray and Chichilo Salad ($12).
PAIR THIS WITH: Fill your tasting glass with Cote Mas Blanc Mediterranee 2015 from Sud de France, or Mano a mano Tempranillo 2014 from La Mancha, Spain.
