If you love soft, chewy biscuits with large chunks of chocolate, then this is the recipe for you! Bake them and serve for a party or store them in an air-tight container for a treat anytime of the day.

Ingredients

  • 1½ cups self-raising flour
  • ½ cup plain flour
  • 1 cup caster sugar
  • ½ cup brown sugar
  • 185 g unsalted butter, melted, cooled
  • 100 g white chocolate, chopped
  • 100 g dark chocolate, chopped
  • 1 egg, plus 1 egg yolk
  • 1 tsp vanilla extract
  • Chopped mini eggs of choice, to decorate

Preheat oven to moderate, 180 C. Lightly grease and line 4 oven trays with baking paper.

Sift combined flours into a large bowl. Stir in caster and brown sugar, butter, chocolate, egg, yolk and vanilla to form a dough.

Roll heaped tbsps. Of mixture into balls. Arrange evenly on trays about 4 cm apart (to allow biscuits to spread). Flatten slightly with a clean floured palm.

Bake 10 to 15 mins, until golden. Top hot cookies with chopped eggs. Cool completely on trays. Store in an airtight container.
