These crunchy filo parcels with turkey and vegetables make great starters or nibblers for a dinner party.
Ingredients
- 2 cups coarsely chopped cooked turkey meat
- 1 red capsicum, sliced finely
- 100 g snow peas, trimmed, sliced finely
- 2 green onions (green shallots), chopped finely
- ¼ cup pine nuts, toasted
- ½ tsp smoked paprika
- 60 g butter, melted
- 8 sheets filo pastry
Steps
Preheat oven to 180 C. Line a baking tray with baking paper.
In a large bowl, combine turkey meat, capsicum, snow peas and pine nuts. Season with sea salt and freshly ground black pepper; toss to combine.
Stir paprika into melted butter.
Place one sheet of filo pastry on a clean board, brush lightly with paprika butter. Repeat with remaining sheets.
Place turkey mixture along length of filo, leaving a 5-cm border on all sides. Fold the smaller sides over, then roll up to form a log. Brush with any remaining butter, then carefully transfer to the prepared tray.
Bake for 30 mins or until browned. Serve warm.
