A citrus rendition of Kuih Semperit, as a Malaysian traditional cookie, is a fantastic snack to intrigue visitors during Hari Raya Aidilfitri (Eidulfitri)!
1Preheat oven to 150 C. Line baking tray with greaseproof paper.
2Combine flour mixture in a mixing bowl. Set aside.
3Cream butter, sugar, egg yolk and orange rind until light and fluffy. Add in orange paste, flour mixture and mix well. Allow dough to rest for at least 30 mins in the refrigerator before baking.
4Use a semperit mould to shape cookies and sprinkle sugar crystals over cookies. Bake for 20 mins.
If dough is too stiff to press out from semperit mould, add a spoonful or two of milk to loosen it. The traditional version of these cookies is plain, but orange rind and orange paste have been added for the modern fresh taste.
