And they sure taste as good as they look — cottony fluffiness made better with mixed berries and blueberry coulis, served with berry sorbet and whipped cream.

For the folks at Pacamara, ordinary brunch brilliance isn’t enough.
Case in point: Not just any pancake, but matcha pancakes served with azuki bean paste, and not just an French toast but decadent creme brulee French toast with berry compote and creme brulee ice cream.

3. Clinton Street Baking Co. & Restaurant
Trust the offshoot of the famous New York brunch spot to do some mean pancakes — you’d expect as much from a dish crowned
“Best in the City” twice by New York Magazine.
Served with warm maple butter, the deceivingly unassuming pancakes are definitely worth waking up for — even for the serial snoozers.

4. Atlas Coffeehouse
The waft of freshly made pancakes greets you even before your dish — topped with fresh berries, berry compote and maple syrup — arrives at the table.
Too sweet? We know no such sensation.

These Japanese-style pancakes prove there’s nothing the Japs don’t do well.
Each thick pancake has a browned, light crisp crumb that gives way to a souffle-like interior.
Good enough to have simply with honey syrup, but who’s complaining about that extra dose of decadence atop?
6. Dutch Baby Cafe
Although a Japanese joint, the namesake Dutch Baby pancakes are German-inspired popover pancakes, served on a hot cast iron pan fresh from the oven.
The result: golden-brown, lightly crisp edges that give way to a soft, eggy inner layer.

7. Little Diner
This American diner sports urban chic vibes, serving up brunch fare you’d see in a Manhattan cafe, too.
Come the weekend, our favourite delancey red velvet pancakes, served with homemade cream cheese frosting, whipped cream and maple syrup, is an indulgent affair worth every calorie (which don’t count on weekends so…. you know.)

8. Batter Fluffy Flaps
Is there anything that doesn’t go well with pancakes?
Apparently not, which is why even the inventive savoury creations here sell like hotcakes.
Our reco: the cheeseburger pancake style, with their signature fluffy pancakes taking the place of conventional burger buns or the pancake pizzas that even Italian pizza purists would write home about.

The earl grey-infused pancakes at PUNCH well, pack a punch.
More on the denser side with a delicate hint of earl grey, this earthy dish is balanced by a light brown sugar syrup, and topped with chocolate-dipped poached pear.

Muffin? Pancake? Neither nor, but a happy marriage of the two — these fabulously fluffy, moist muffcakes ticks all the boxes in terms of taste and texture, and made even more perfect for cubes of vanilla bean ice cream, magic balls, pink milk, fresh berries and more.

One for the kids (and kidults): it’s more than just brunch at Slappy Cakes, but a day out in itself.
