New age Chinese restaurant Blue Lotus Chinese Eating House is back with its highly raved about Signature Norwegian Smoked Salmon Yusheng. The festive dish comprises of 10 herbs and vegetables, two aromatic spices, three types of nuts, tea-smoked salmon and salmon skin. It is then topped with a generous dressing of spring-onion-infused olive oil and wild honey yuzu. Diners can also top up their yu sheng with additional goodies such as crispy salmon skin ($8 for 80g), Norwegien salmon ($18 for 100g) and braised abalone ($38 for eight pieces)

Back by popular demand, Group Executive Chef Foo has conjured another wholesome and healthful yusheng. The Season of Wealth Golden Scallop Yusheng is prepared with ingredients such as red dragonfruit and watermelon cubes, pomelo, burdock, quinoa, cherry tomatoes, pickled cucumbers, crispy rice and walnuts among others, with deep-fried yam strips and Hsin Chu bee hoon, this lo hei boasts refreshing flavours and a pleasing crisp and crunchy bite. For the final flourish, salmon roe and sweet scallop slices are briefly torched to crown this delightful ensemble alongside a drizzle of olive oil-based dressing with flower blossom syrup and plum sauce.

Created with a contemporary touch, this artful Joyful Blessings Lo Hei embodies the season with edible flowers, goldfish-shaped Japanese pickles and a hand-illustrated Chinese character. Wasabi flying fish roe and dried kombu atop, raw salmon slices are delicately arranged in a circle to symbolise harmony and unity, finished with sea salt and a drizzle of extra virgin olive oil. The platter also features jellyfish, agar agar strips, and an array of vegetables and fruit such as romaine lettuce, wild arugula, yellow frisee, red shiso, red, white and green radishes, purple shiso, red sorrel, pickled melon strips and fresh pomelo. On the side are deep-fried yam and sweet potato strips, crushed peanuts, white sesame seeds and pine nuts, as well as a dressing made from plum sauce, strawberry jam and calamansi juice.
