Fun fact: The Japanese consider instant noodles – not their awesome tech gadgetry – as their best invention of the 20th century.

1. Sanpoutei Ramen

Freshly homemade ramen noodles and a robust, flavourful broth stewed for six hours make up Sanpoutei’s signature Niigata Shoyu (soy sauce) ramen, finished with meat and other toppings.

For something a little different, try the creamy tan tan broth, a harmony of nutty and umami flavours.

2. Men-Tei Ramen

Men-tei Ramen occupies a small, intimate space that’s easily missed, but inside, it’s got all the vibes of a ramen bar in downtown Tokyo.

Their all-natural broth is made with pork and chicken bones bouled with high heat for nine hours, giving it a smooth yet intricately layered oomph. Go crazy with the add-ons, the yakibuta cubes (slow-cooked pork) especially.

3. Brothers Ramen

The pair of brothers started out with an eatery called Homemade Dough and, by a twist of fate (and the realisation that they make a mean ramen), Brothers Ramen was born.

The broth is slightly lighter — perhaps to suit the local palate — but no less bursting with flavour. The braise pork belly will keep you returning, so since you’re already there, add an extra portion to your meal.
