If you start each new week with good intentions to cook up a storm with lovely fresh produce but are often side-tracked with general life happenings, you’ll be familiar with that sinking feeling when you realise all those overripe fruits and vegetables are destined for the bin.

One of the most common victims of the overripe curse is the humble banana. They’ll be chugging along well for a few days and then, bam! Your lovely yellow bunch looks spotty and diseased and feels disturbingly mushy.

But while an easy banana bread recipe is the saving grace for many in this situation, this universal favourite can be far more versatile. Here are some great ways with our recipes:
