What to check out this week: Celebrity chef Chef Wan’s showcase of Malaysian palace cuisine at Ginger at Parkroyal on Beach Road, an omakase experience with a view of the marina, Cantonese restaurant Man Fu Yuan is presenting an eight-hands collab, and more.
Malaysian celebrity chef Redzuawan bin Ismail, better known by his stage name Chef Wan, has teamed up with Ginger at Parkroyal on Beach Road to present the best of Malaysia’s palace cuisine. Showcased across four dishes, they’ll be served alongside the restaurant’s Ramadan Festive Lunch and Dinner Buffet from Mar 5 to April 23, 2023.
There’s Laksa Johor, which sees a thick creamy fish-based broth served with al dente spaghetti, as well as Ayam Percik Kelantan, oven-grilled chicken laced with a spiced gravy. For a mutton option, go for Kuzi Kambing Johor, with tender meat stewed in a blend of spices, ghee, tomato puree and more, lending to a sweet, slightly fruity flavour.
You’ll also enjoy the Rendang Udang Galah Perak, starring succulent meaty king prawns slathered with a piquant coconut-based gravy. And as a tribute to his grandmother, the spritely chef is also presenting her rendition of Kerabu Mee Hoon Nyonya. This is our favourite of the lot, served chilled with a refreshingly tangy and tongue-tingling mix of spices and ingredients like prawns and fried tofu.
If you’d like to catch chef Wan in the flesh, he’ll be hosting a live cooking demo at the restaurant on Mar 12, 2023. Get your tickets here.
Available from Mar 5 to April 23, 2023. From $55++ per adult for a weekday lunch buffet to $88++ per adult for a weekend dinner buffet. Parkroyal on Beach Road is at 7500 Beach Road, Singapore 199591. Click here for reservations.
After a makeover in Oct 2022, Greenwood Fish Market at Quayside Isle now offers five dining concepts in one place, from an oyster bar to a bakery and deli, a wholesale market, a bar and restaurant, and an omakase counter.
If indulging in omakase with a waterfront view appeals to you, head to the 12-seat omakase bar helmed by chef Steven, who showcases the bounty of the season. There’s bafun uni served with homemade tofu and succulent lily bulbs, crunchy ark shell with tangy su-miso, tender bamboo shoots in a sweet briny marinade. On the sashimi front, the Hokaiddo scallop is particularly sweet and fleshy, and the fatty jabara otoro melts in the mouth.
We had no complaints with the tempura either, with light airy batter coating the likes of sansai (mountain vegetables) and botan ebi wrapped with fragrant oba leaf. succulent wagyu beef stuffed into daikon. Then comes the sushi, which started with rich buttery chutoro, followed by kinmedai (golden eye snapper) that’s torched for a smokey flavour, and hotate (scallop) with Bafun uni.
We finished our meal with a pretty plate of seasonal fruits, datemaki (sweet rolled omelette) and handcrafted desserts, like a refreshing ume shu jelly, a yuzu mochi and a goma mochi.
Omakase dining is exclusively available at Quayside Isle outlet. Lunch is at $98++ and $138++ (eight and 10 courses), and dinner is at $188++ and $238++ (10 and 12 courses). Greenwood Fish Market is at #01-02 Quayside Isle, 31 Ocean Way, to 05, Singapore 098375.
