What to get excited about this week: Tiong Bahru Bakery’s new outlet and exclusive hot dish menu at Waterway Point, Gusta Sourdough Pizza Co. has opened at Serangoon, a hairy crab feast at Min Jiang and Min Jiang at Dempsey and more.
What was formerly Cottontail Creamery at Serangoon is now Gusta Sourdough Pizza Co, also helmed by the same chef-owner Sean Lai. The space has also undergone a revamp, now flaunting a casual industrial chic vibe with a semi-open kitchen.
Neo-Neapolitan sourdough pizzas are the stars of the menu, with the dough a proprietary combination of sourdough together with Japanese and Italian flours. It’s then proofed for between 24 to 30 hours to nail a chewy bite and airy cornicione.
Satisfy your carb cravings with options like Margherita ($20.50) and Italian Sausage ($24.50) as well as vegan options such as Mushroom & Truffle Oil ($27.50). One of our favourites is the Swiss classic-inspired Raclette Cheese & Potato ($26.50), which has thin potato slices and luscious cheese that’s generously sprinkled with aromatic black pepper and paprika. The Calabrese Salami ($22.50) laced with housemade garlic maple syrup and chilli oil also gets our thumbs up with its marriage of sweet, savoury and spicy notes. We found it a little gamey on its own, but drizzling more maple syrup (also served on the side) instantly adds a different dimension and also tempers the heat.
Mala lovers will rejoice in the Mala Chicken ($24.50), with juicy well-seasoned chunks of minced chicken atop a mala cream base and lashings of chilli oil; it’s big on flavours, but this also makes it just a bit too greasy. Can’t decide on what to get? You can soon look forward to a three ft-long pizza on the menu, customisable with four flavours (not available for now until further notice).
A small menu of sides is available, and they’re also worth sampling. There’s the creamy Stracciatella & Vine Tomatoes ($18.50), as well as a tender sous-vide Australian wagyu Roast Beef ($16.50) accompanied by chimichurri and tangy horseradish mayo.

Tiong Bahru Bakery has opened its 11th and newest outlet at Waterway Point mall in Punggol. Apart from its usual stable of croissants and other bakes, there’s also a new and exclusive menu of hot items here, from a chicken burger to croffles (that’s a croissant + waffle hybrid).
The Punggol outlet is the only one where you’ll find croffles, made with its croissant dough and then pressed between the waffle iron. Fluffy but crisp, savoury options include a Breakfast Croffle ($22) loaded with streaky bacon, roasted portobello mushroom, a fried egg, and a ranch herb sauce, as well as the Pull My Pork Croffle ($22) that satiates with a flavourful medley of tender cajun spiced pulled pork, avocado, sour cream, and pickled jalapenos.
For a sweet fix, the Dessert Croffle ($14) is served with vanilla bean ice cream and house-made chocolate sauce.
What’s also worth the calories is the Crispy Chicken Burger ($22) that stars a slab of juicy fried chicken thigh — the crust is irresistibly crisp and airy — drizzled with a creamy gochujang sauce. Other menu items include the Truffle Mushroom Grilled Cheese ($20), Egg Soldiers ($12) with sous vide eggs and sourdough bread, as well as Quinoa Salad ($18).
Tiong Bahru Bakery is at #01-66 Waterway Point West Wing, 83 Punggol Central, Singapore 828761. Opens daily from 7.30am to 9pm. The hot food menu is available from 10am to 9pm.
If you’ve been to the one-Michelin-starred Nouri helmed by chef-founder Ivan Brehm, you may be acquainted with his ‘Crossroads Thinking’ culinary philosophy, which highlights the interdependence, influence, and relationship of all things.
Appetite, located above Nouri and also opened by Brehm, is his creative interdisciplinary space that applies the same ‘Crossroads’ narrative not just to its food, but also brings art and music into the mix.
The atmosphere is homey but chic, with art lining the walls, and plush seating that beckons you to sink in. Hole up in the cosy Lounge or park yourself at the Listening Room on the top level where a selection of vinyl records is on display.
Appetite has introduced a Happiest Hour menu ($68++) that primes your belly with three beautifully plated signature snacks and a glass of N.V. Henri Giraud Esprit Nature Champagne. There’s Tortilla de Camarones, a tempura-like sakura ebi fritter topped with a creamy mix of sweet amaebi (spot prawns), spiced Marie Rose sauce, grapefruit and lime.
Velvety and decadent, the Foie Gras and Chicken Liver Parfait served on toast is a nod to Brehm’s love for Nouvelle cuisine. House pickled grelot onions as well as crosnes brighten the dish and lend added crunch.
Then dig into the King Crab Bhel Puri, which draws on Vietnamese chả cá Lã vọng and Indian Bhel Puri. The comforting rice bowl is gussied up with Norwegian king crab, alongside Japanese buttered rice, crunchy puffed rice, and a fresh herbaceous flavour from dill and turmeric milk foam.

Hairy crab season is upon us, and Goodwood Park Hotel’s Min Jiang and Min Jiang at Dempsey is wooing diners with stellar set menus and a la carte options that shine the light on the crustacean, exclusively available from Oct 12 to Nov 30, 2022.
New items to feast on this year: Braised Hairy Crabmeat and Roe with Crystal Noodles at Min Jiang, as well as Crispy-fried Hairy Crabmeat with Prawn Ball at Min Jiang at Dempsey.
Past crowd-favourites have also made a return, from the Steamed ‘Xiao Long Bao’ with Hairy Crabmeat, to the Steamed Hairy Crab with Glutinous Rice served in Bamboo Basket, Baked Hairy Crabmeat in Mushroom; and Rice Crisp with Hairy Crabmeat and Egg White.
There’s also a repertoire of dishes specially curated to complement the prized crustacean. Think U.S. Pork Loin with Coffee Sauce and Deep-fried Sea Perch Fillet with Spicy Kumquat Sauce and Lychee (Minjian), as well as Braised Pork in Wuxi Style (Minjiang at Dempsey).
Six-course set menus are available at both outlets, as well as a la carte dishes.

Swensen’s has debuted a menu of Asian fare that is exclusively available at selected outlets — Changi Airport Terminal 3, Plaza Singapura, and Clementi Mall.
Dig into local favourites like Claypot Spicy Laksa ($15.80), Curry Chicken ($15.80) served with rice, salted egg, sambal chilli and ketchup manis, as well as Swensen’s Nasi Lemak with fragrant coconut rice and a hefty deep-fried chicken cutlet.
Or relish the smoke-kissed flavours of classic stir-fry dishes such as Beef Hor Fun ($14.80) that uses chilled US Sirloin and comes topped with crispy beef fat. There’s also the Indonesian-style Seafood Mee Goreng doused in a creamy sweet-spicy sauce and crowned with seafood like king prawns, fried fish fillet and squid.
