Raffles Hotel Singapore is doling out tempting afternoon tea treats that’ll whisk you away to Norway.
The Oslo Afternoon Tea experience, held at the opulent Grand Lobby, embraces Norwegian flavours with a selection of sweet and savoury morsels. The desserts are equally delightful, and include the classic Fyrstekake, a rich cardamom and almond tart; a sweet and creamy lingonberry mousse, Norwegian cinnamon buns; and traditional almond cookies. Wash it all down with either Mariage Frères tea or a cuppa brewed with the hotel’s custom blended coffee beans.
The dress code is casual chic, so that means no shorts or slippers.
$88++ per guest, available from Jan 3 to March 6, 2022. The Grand Lobby is at Raffles Hotel Singapore, 1 Beach Road, Singapore 189673. Visit its website for reservations or more information.
At the same time, Raffles Hotel Singapore’s Tiffin Room is debuting a new menu dedicated to the authentic specialities and sumptuous flavours of Rajasthan. Put together by award-winning chef Kuldeep Negi, the menu draws on his personal travels to the North Indian state.
Expect Rajasthani delicacies like Kanji Vada, deep-fried yellow lentil dumplings with chilled mustard and asafoetida water, or grilled lamb fillet with basil and dried mango. Mains are presented beautifully in a tiffin, with delectable options like Murgh Mokul cooked with chicken breast, yoghurt, almond paste and ground mace, as well as lamb chops flavoured with coriander seeds and cardamom, and Dal Batti Churma, a signature yellow lentil curry with wheat dough balls and ghee. Vegetarian plates like Mawa Kofta Curry, cheese dumplings enveloped in a creamy almond and cashew nut gravy, are available.
You don’t want to miss the sweet treats; there’s the quintessential spherical Doodh Ladoo as well as Makhana Kheer, a sweet dessert pudding of lotus seeds.
From Jan 13 to 27, 2022. The Flavours of Rajasthan menu will be available for lunch and dinner in both non-vegetarian ($88++ per guest) and vegetarian ($78++ per guest).
Ahead of its opening on March 1, 2022, you can have a taste of Hilton Orchard Singapore’s upcoming restaurant concepts: all-day dining buffet resto Estate, as well as the botanical-inspired lounge and bar, Ginger Lily.
The hotel, which takes over the former Mandarin Orchard, is hosting a two-day pop-up dining event on Jan 21 and 22, 2022, and taking over the “Eat At My Kitchen” space at Dempsey Hill. Line your tummies with a special four-course lunch menu or a six-course dinner menu, both of which draw on the history, spices, and produce of Orchard Road in its years as a plantation.
The kitchen’s helmed by the hotel’s Director of Culinary, Vijayakant Shanmugam and Executive Pastry Chef, Cindy Khoo, and you’ll get to feast on handpicked dishes like Black Truffle Roasted Duck, Honey Soy Glazed Australian Short Ribs, Squid Ink Tagliatelle with Octopus Confit and a dessert, The Ginger Lily.
