What to chow down on: Inventive sushi creations at Fukui, Neapolitan-style pizzas from famed US pizzeria Roberta’s, a nature-inspired afternoon tea set at The Capitol Kempinski Hotel Singapore, and more.
New York-based pizzeria Roberta’s has made its way to Singapore at Marina Bay Sands, its first outpost outside of the United States. Conceived in 2007 in Brooklyn, it’s well-loved for its wood-fired Neapolitan-style pizzas that are characterised by a thin crust base and chewy cornicione (the edge of the pizza).
The interiors of the 44-seater at Marina Bay Sands is vibrant and eclectic, with vivid artworks (including those by Singaporean pop artist Andre Tan) dotting the space. A neon sign, together with a cherry red hybrid wood- and gas-fired oven take centre stage.
The 12-inch pizzas, which use a natural starter, are light, we have to say. Those who aren’t big eaters won’t find it difficult to wolf down three to four slices in a sitting. One of the brand’s most famous pies is the Bee Sting, which highlights mozzarella, Calabrese salami and basil, housemade chilli oil and honey. The taste of the honey is pronounced and makes for an interesting combination with the spicy and savoury porky flavours.
Cheese lovers will enjoy the Cheesus Christ ($28), made with three kinds of cheese and comes sprinkled with black pepper, though we find this lacks the dimension of the Bee Sting. Also worth sampling is the Baby Sinclair ($29), topped with charred and crisp dinosaur kale, earthy mushrooms, Calabrese peppers and slices of burnt garlic— it’s clean-tasting but in a good way. You can also accompany your pizzas with starters like the House Bread with Cultured Butter ($9) or with Stracciatella ($15), and the refreshing Smashed Cucumber Salad ($12), tossed with fermented garlic paste, Korean chillies, peppercorns and mint.

Since its opening last year, omakase restaurant Fukui has drawn diners with its inventive take on Japanese dining and warm hospitality. The quietly elegant interiors house two dining areas and several private rooms, but the best place to park yourself is at the counter, where you can watch head chef Nick Pa’an work his magic.
This Spring, he doles out an omakase menu that’s curated weekly, and with an expanded variety of produce and seafood. Savour the likes of noresore (young conger eels) and hotaru ika (firefly squid) — we had ours as a refreshing starter together with ponzu and egg yolk mousse — as well as the succulent flesh of kegani (Hokkaido hairy crab) and fatty ishidai (striped beakfish), which is indigenous to Japan’s waters.
The menu also shines the spotlight on imaginative sushi creations, like the bincho-tan sushi series — fresh seafood seared with the hardwood charcoal not only imparts a smoky aroma but also draws out their natural flavours. We’re still thinking about the seared kama su (barracuda), garnished simply with young green onion, but brimming with flavour.
Fans of chef Pa’an will still get to savour his signatures, like the Ise Ebi with Imo Tofu, a luscious chunk of spiny lobster atop a package of lightly fried yam with a velvety centre, and a heady lobster potage sauce. There’s also his Negitoro, replete with uni, ebiko and generous lashings of his growing three-year-old anago (sea eel) sauce.
From Feb 21, you can also enjoy limited-time-only sake pairings with Pa’an’s seafood creations, a tie-up with JFOODO, an organisation within the Japan External Trade Organisation (JETRO).
Lunch sets start from $138++ to $168++ for seven courses. For lunch and dinner, Sushi Omakase* starts from $188++ to $258++ for five courses, and Omakase menus start from $288++ for nine courses to $388++ for ten courses. *Binchotan sushi is only available for dinner seatings.

The Capitol Kempinski Hotel Singapore is drawing on nature with its latest afternoon tea affair, with delectable bites served across five courses and with tea pairings. Make your way through a Foie Gras Rocher dressed with candied fruits, Valrhona chocolate and nuts, a Jamon Iberico De Bellota with compressed cantaloupe, a Smoked Duck Rice Paper Roll and a smashed avo sourdough.
There are also Asian flavours in the mix, from the Beechwood Smoked Chicken quiche with Japanese fruit curry to chilled chawanmushi made with spicy century egg emulsion, and a palate cleanser of a Frozen Kyuri Cucumber Yuzu Lemonade sorbet.
Sweets present themselves in the form of a treacly Forest Berries & Plum Pudding, Pandan Emerald Tart with coconut Chantilly and green moss topping, and a Lemon Bergamot Cake dressed with delicate marigold blooms.
$52++ per person on weekdays and $58++ per person on weekends. Available for dine-in from 2.30pm to 5pm at the Lobby Lounge or as a takeaway or delivery option via the hotel’s online shop.

From March 19, the modern Cantonese restaurant is putting out an a la carte menu of over 25 varieties of handcrafted delights only available on the weekends, all exquisitely crafted by head Chinese chef Lim Hong Lih and his team.
Chef Lim’s Signature Deep-Fried Duck Roll ($12++ for three pieces) is a crowd-favourite, alongside inventive plates like Sand Ginger Cuttlefish ($16++) as well as Shredded Chicken with Sesame Sauce ($12++), sprinkled with rice crisps. Prefer classics? Order the Scallop Siew Mai with Fish Roe ($7.50++ for three), steamed Shrimp Dumplings ($7.50 for three pieces) packed with finely diced winter bamboo shoots, or the Honey Barbecue Pork Puff Pastry ($ 7.50 for three pieces), a perennial favourite.
If you need more than bite-sized morsels to fill your belly, there are sumptuous mains too, like the Fried Rice with Wagyu Beef and Truffle Sauce ($38++), and Boston lobster in Braised Ee-fu Noodles with Prawns in Lobster Sauce ($25++).
