The latest in dining this week: Conrad Centennial Singapore’s Strawberry Afternoon Tea, a three-course menu by MasterChef Australia’s fan-favourite contestant Tommy Pham, Haidilao’s new menu additions, and more.
It’s strawberry season at Conrad Centennial Singapore. From now till March, roll up to the hotel’s elegant Lobby Lounge and dig into a pink-hued afternoon tea centred around the luscious fruit.
Savouries get a fruity spin too, like the buttery crumbly dehydrated strawberry tart with avocado cream, fresh mango, succulent prawns, and fresh dill, alongside rose-tinted brioche buns stacked with spicy pulled chicken and tangy passion fruit chutney. There’s also a foie gras mousse sweetened with crunchy apple bits, though the mousse leans just a little too pasty and gamey.
The strawberry theme really comes through with the sweets, from a pistachio and strawberry tart with almond cream, to the soft pillowy Mascarpone Strawberry Swiss Roll with wild strawberry jam and a Classic Strawberry Shortcake. Chocolate-dipped strawberries get an upgrade too, with fresh (and delightfully sweet) premium Japanese strawberries, and a decadent Valrhona chocolate dip.
The strawberry and raisin scones, which are pleasantly dense and chewy, come with strawberry jam and clotted cream. Each set’s inclusive of a choice of coffee and tea (the selection’s rather extensive), and as part of its Valentine’s Day special, you’ll enjoy a round of complimentary sparkling wine from Feb 11 to 14, 2023.

If you’ve caught up with seasons 13 and 14 of Masterchef Australia, you’d likely be familiar with contestant Tommy Pham, best known for his exciting renditions of Vietnamese fare.
And now you can taste his creations for yourself at The Westin’s Cook & Brew. The gastro-bar has teamed up with chef Tommy for a three-course set menu. It kicks off with an entree of Roti Banh Mi with roasted Australian beef tenderloin, mushroom-flavoured banh mi sauce, truffle mayo and greens. For mains, you’ll be served Cha Ca La Vong, grilled turmeric fish with seared dill and spring onions, nuoc cham sauce and dill oil, alongside with rice noodles. The meal concludes with Vietnamese Flan, coffee granita and coconut condensed milk sauce.
The A Taste of Vietnam three-course set menu is at $68++ per person, available from Feb 15 to 30 April, 2023 (for dinner, 6pm to 10.30pm). Full prepayment is required to secure dining reservation.

After an extensive revamp, The Summerhouse has unveiled the new Au Balcon, which was formerly the French Dining Room located on the second level. Translating to “on the balcony“, Au Balcon presents a refreshed interpretation of classic French flavours.
The classic Nicoise salad ($28++) is taken on a spin, heaped generously with smokey and tender grilled octopus leg, as well as local kelong-farmed prawns atop the likes of butterhead lettuce, haricot verts and fingerling potatoes. You can also go for the Florentine 65°C Organic Egg ($18++), a comforting small plate of a wobbly farm-fresh egg with garlic-sauteed spinach, velvety cauliflower puree, pecorino, aromatic fresh truffle shavings, and truffle vinaigrette.
The Inka-grilled Pluma Iberico ($48++) is the main attraction in our books — gorgeously tender with a generous marbling of fat, it pairs well with a celeriac puree that’s sweetened with apple. What felt like a missed opportunity were the accompanying brussels sprouts, which could have been more caramelised and crispy. If you like your seafood, there’s the sustainably sourced Seared Kuhlbarra Barramundi ($36++) that sits in a moreish savoury crustacean reduction, and a bed of creamy polenta that also shines. For beef, there’s the quintessential L’Entrecôte Steak Frites ($$52++), or you can go for the tender charcoal-grilled Wagyu Striploin ($98++), served with a buttery, smoked potato puree and broccolini.
For dessert, try the Creme Brulee ($16++) that’s enlivened with a citrusy tang or the Paris–Brest ($16++) with a luscious nutty praline diplomat. The choux pastry, however, falls a little short. Both come served with smooth homemade ice cream.
After your meal, you can explore the grounds, which have also undergone a revamp, including the upgraded garden domes and a manicured lawn that’s open to the public.

For your next jaunt to Haidilao, you can expect a slew of new menu additions. The beloved hotpot chain has added 10 new menu mainstays, including a new broth, new cuts and ingredients.
For starters, there’s a new Mala Milk Broth (from $11++ for quarter pot), which combines its signature mala broth with milk — this helps temper the heat as well as brings a creamy mouthfeel to enhance the broth’s savoury richness.
Dip it with the new Sichuan Pepperfect Beef Tongue (From $15++ for half portion), a tender cut marinated in aromatic Sichuan peppercorn oil. Beef lovers can also order the Beef in Milk Bath ($36++), which sees tender wagyu doused in milk. Fans of the chain’s prawn paste, the new Tobiko Chunky Prawn Paste could be your new obsession, made with chunks of fresh prawn and fish roe.
There are new carb options too, like the Sweet Potato Noodles (from $4) and Waterfall Potato Strings (from $3.50++), which are crunchy potato noodles that take just eight seconds to cook. But if you’re on a low or no-carb diet, konjac slices (from $4.50++) have been introduced to the menu.
