Contemporary Japanese restaurant Sens Dining, helmed by chef Kent Seah, has rolled out inventive takes on sushi for a novel dining experience.
Available in limited sets daily, the Yagura Ketsuga Sushi Box ($88++, good for two to four persons) comes in a tiered box shaped like an ancient fortress. Each tier holds different ingredients to concoct a luxurious handroll, from crispy seaweed to uni, negitoro, and a chirashi of scallops, salmon, tuna and hamachi atop sushi rice.
Or dig into the new Sushi Tacos, with ebi senbei prawn crackers doubling as taco shells. There are five options of fillings available, such as the Ebi with Tobiko ($8++) which has juicy tempura prawns, Negitoro ($13.20++), filled to the brim with minced fatty tuna, and Hotate Uni ($25.80++) which marries sweet scallops with uni flown in from Japan.
