Lamb With Hokkien Mee


2 tbsps oil

1 tbsp ginger, sliced

2 cloves garlic, crushed

250 g lamb fillet, trimmed, sliced

115 g baby corn, halved

150 g snow peas, trimmed, halved

1 carrot, thinly sliced

4 scallions, sliced

ΒΌ cup soy sauce

2 tbsps sweet sherry

1 tbsp chilli sauce

440 g packet Hokkien Noodles


1Heat oil in wok on high. Stir-fry ginger and garlic for 1 min.

2Stir-fry lamb in two batches, for 2 to 3 mins each. Return all lamb to wok.

3Add vegetables, soy sauce, sherry and chilli sauce. Stir-fry for 1 to 2 mins until boiling.

4Toss noodles through. Stir-fry for 1 min. Serve straight away.
