A refreshing dessert with just three main ingredients (dried longan, white fungus, red dates and ginkgo nuts) added, this soup can be served hot or cold to your preference.

1To prepare the white fungus, soak the white fungus in water for 10 mins, remove the hard part. Soak overnight in the fridge.
2Break open the luo han guo using a mortar & pestle.
3Place all ingredients A in a big pot to boil, then simmer on low heat for an hour.
4Discard the luo han guo, pandan leaves and red dates.
5Add all the ingredients B and continue simmer for 30 mins.
6Add rock sugar to taste. Serve.
