1Preheat oven at 180 C. Grease and line a 12 x 22 cm loaf tin.
2Combine bacon, zucchini, carrot and cheese in a large bowl. Add flour and toss it through the vegetables.
3Whisk oil and eggs together, then add to the dry ingredients. Stir to combine. Season with salt and pepper.
4Pour mixture in the loaf tin and spread evenly. Bake for 45 mins or until golden and firm to touch. Remove and allow to cool. Cover with plastic wrap and store in the fridge until ready to use. Slice into pieces before packing.
