Baked Peach Crumbles

For a quick and refreshing dessert, serve up warm baked peaches with an ice cream of your choice. The cereal clusters give an added crunch that's so satisfying.

825 g can peach halves in syrup, syrup reserved

¼ cup plain flour

50 g butter, chilled and chopped

2 tbsps caster sugar

1 tbsp blanched almonds, chopped

1 cup clusters breakfast cereal

Ice-cream, to serve


1Preheat oven to moderate, 180 C. Lightly grease a large baking dish. Pour in reserved syrup and arrange peaches in dish, cut side up.

2Sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Use fingertips again to mix in sugar, almonds and cereal.

3Sprinkle crumble mixture evenly over fruit. Bake 12-15 mins, until golden. Serve warm, with ice-cream.
