Butter & Salted Eggs Pork

Succulent bite-sized pieces of pork loin are deep-fried and tossed into a curry leaf, chilli, butter and salted egg extravaganza.

250 g pork loin

2 to 3 salted egg yolks

1 stem curry leaves, discard stem

1 red chilli, cut

1 tbsp butter

2 tbsps evaporated milk

⅓ tsp salt

½ tsp sugar

½ tbsp oyster sauce

½ tbsp light soy sauce

½ tsp sugar

½ tsp sesame seed oil

4 tbsps corn flour

1 egg

1 dash of pepper


1Cut meat into bite size pieces.

2Add egg, light soy sauce, oyster sauce, sesame oil, sugar, corn flour and mix well. Ensure all the meat is evenly coated. Marinate the meat for 30 mins.

3Heat a large pan with oil to deep fry pork.

4Drain them on paper towels and set aside.

5Meanwhile, steam the salted egg yolks for 10 mins or till just done.

6Smash cooked yolks.

7Melt butter and add in curry leaves and fry till fragrant.

8Add in cut chilli, salted yolks, evaporated milk and pre-cooked meat.

9Toss well quickly.

10Add salt and sugar to taste.

11Stir till well combined.

12Dish and serve immediately.
