1In a bowl, whisk together eggs, milk and vanilla. Dip hot cross buns into egg mixture, turning to coat.
2Heat butter in a large frying pan on medium. Cook buns in two batches, 2 to 3 mins each side, until golden.
3Serve with banana and strawberries. Drizzle with maple syrup.
TIP: If preferred, use fruit bread or brioche in place of hot cross buns.
