1Preheat oven to 180 C. Line a baking tray with baking paper.
2In a large bowl, combine turkey meat, capsicum, snow peas and pine nuts. Season with sea salt and freshly ground black pepper; toss to combine.
3Stir paprika into melted butter.
4Place one sheet of filo pastry on a clean board, brush lightly with paprika butter. Repeat with remaining sheets.
5Place turkey mixture along length of filo, leaving a 5-cm border on all sides. Fold the smaller sides over, then roll up to form a log. Brush with any remaining butter, then carefully transfer to the prepared tray.
6Bake for 30 mins or until browned. Serve warm.
