They make take some conscientious effort, but these sweet and delicate mud cake sandwiches are a great way to demonstrate your appreciation for loved ones. It features crisp cookies imprinted with a cocoa-dusted heart, and soft as a cloud ganache imbued with utter chocolatey richness.

Ingredients

  • 250 g butter, softened
  • 1½ cup (330 g) firmly packed brown sugar
  • 2 eggs
  • 3 cups (450 g) plain flour
  • ½ cup (75 g) self-raising flour
  • ½ cup (50 g) cocoa powder
  • 2 tbsps cocoa powder, extra
  • 1 cup (150 g) plain flour
  • 2 tbsps cocoa powder
  • 2 egg yolks

CHOCOLATE MUD CAKES

  • 150 g butter, chopped
  • 100 g dark eating chocolate, chopped coarsely
  • 1 cup (220 g) caster sugar
  • ½ cup (125 ml) water
  • 2 tbsps coffee liqueur

CHOCOLATE GANACHE

  • ⅓ cup (80 ml) cream
  • 200 g dark eating chocolate, chopped coarsely

Preheat oven to 170 C (150 C fan-forced). Grease two 20 cm x 30 cm lamington pans, line with a strip of baking paper, extending paper 2 cm above edges of pans.

Beat butter, sugar and eggs in small bowl with electric mixer until combined. Transfer mixture to large bowl, stir in sifted flours and cocoa, in two batches. Knead dough on floured surface until smooth, divide in half, roll each portion between sheets of baking paper until 5 mm thick. Cover, refrigerate 30 mins.

Make chocolate mud cake. Combine butter, chocolate, sugar, the water and liqueur in small saucepan. Stir over low heat until smooth. Place mixture in medium bowl, cool 10 mins. Whisk in sifted flour and cocoa, then egg yolks. Divide mixture among pans. Bake about 25 mins. Cool cakes in pans. Using 6.5 cm round cutter, cut 12 rounds from each cake.

Make chocolate ganache. Bring cream to a boil in small saucepan, remove from heat. Add chocolate, stir until smooth. Refrigerate until spreadable.

Preheat oven to 180 C/160 C fan-forced). Grease oven trays, line with baking paper.

Using 6.5 cm round cutter, cut 48 rounds from dough. Place about 3 cm apart on oven trays. Bake about 12 mins. Cool on wire racks.

Spread ganache onto underside of cookies, sandwich a mud cake round between two cookies.

Using heart template, dust cookies with extra cocoa.
