For a fast and easy seafood dish, look no further than these appetising bamboo prawns that require less than half an hour to make. With the green king prawns, ham, and an assortment of greens, no one’s going to guess they were a breeze to prepare!
Ingredients
- 500 g green king prawns
- 3 tbsps oil
- 1 tsp grated green ginger
- 1 bamboo shoot
- 1 stick celery
- 4 shallots
- 3 slices ham
- ½ cup water
- 1 chicken stock cube
- 1 tsp cornflour
- 2 tsps dry sherry
Steps
Make shallow cut along back of prawn and remove back vein.
Cut bamboo shoot into 1 cm (½ inch) slices, then cut each slice into 5 mm (¼ inch) strips. Cut celery, shallots and ham into strips, approximately the same size.
Cut a 1 cm (½ inch) slit right through prawns, along the line of the vein. Push a strip of bamboo shoot, celery, shallot and ham through slit in prawn.
Heat oil in wok or large frying pan, sauté ginger for one minute, add prawns, sauté until light pink. Combine water, crumbled stock cube, cornflour and sherry, add to pan, stir until sauce boils and thickens, reduce heat, simmer 1 min.
