This gorgeous fried noodle salad tastes every bit as great as it looks and is super easy to whip up without making much of a mess!

Ingredients

  • 300 g seasoned turkey or chicken slices
  • ½ red cabbage, shredded
  • 440 g can pineapple pieces, drained
  • 6 scallions, sliced
  • ½ cup roasted peanuts, chopped
  • ½ cup olive oil
  • ¼ cup rice-wine vinegar
  • 2 tbsps sesame oil
  • 2 tbsps sugar
  • 1 tbsp soy sauce
  • 1 100 g packet fried noodles

Char-grill chicken or turkey slices, 2 mins each side.

In a salad bowl, combine cabbage, pineapple pieces, scallions and chopped peanuts.

03.

Combine olive oil, rice-wine vinegar, sesame oil, sugar and soy sauce. Toss through salad with a 100 g packet fried noodles.
