Ingredients

  • 2 limes, quartered
  • 12 sprigs mint, leaves stripped
  • ¼ cup Amaretto
  • ¼ cup Paraiso lychee liqueur
  • 1 cup lychee juice
  • 2 cups ice cubes
  • 1 cup chilled soda water
  • 6 fresh or canned lychees
  • Extra ice cubes and mint sprigs, to serve

Squeeze 4 lime wedges into a cocktail shaker, then throw in the skins. Add 4 sprigs of the mint and half each of the Amaretto, Paraiso, lychee juice and ice; shake well.

Strain the mixture into three cocktail glasses; top up with half the soda water. Garnish with fresh lychees, extra ice and mint sprigs.

Repeat with remaining ingredients to make a total of 6 cocktails. Serve immediately. Not suitable to freeze.
