- 20 g white fungus
- 20 g dried lotus seeds
- 1 fresh pear
- 6 dried red dates, stones removed
- 70-80 g rock sugar
- 400 ml water
- 15 g wolfberries or goji berries (for taste)
Soak dry lotus seeds and dried pear in cool tap water for about 20 mins. If you are using dried pear, also let it soak in the water for 20 mins. Peel and cut dried or fresh pear into pieces.
Soak dried white fungus in a bowl of cool water until it doubles in size. It takes about 20 mins. Discard the water and wash the Snow Fungus under running water to remove any grit. Cut off the dry stem and tear the soft Snow fungus into bite sized pieces.
Fill a pot with 400 ml of water. Add white fungus in the pot and simmer for 20 mins. When the white fungus is thick, add lotus seeds and pear and simmer for 15 mins.
A few minutes before serving, add wolfberry and rock sugar according to taste. Simmer for about 5 mins.
