Ingredients

  • ¼ large red cabbage
  • 2 medium carrots
  • 100 g baby rocket
  • Good handful small whole mint leaves
  • 3 green onions, sliced finely
  • DRESSING
  • 2 tbsps lemon juice
  • 2 tbsps white balsamic condiment
  • 2 tbsps extra virgin olive oil

Remove core from cabbage; shred as finely as possible (with a mandoline is best). Peel carrots, then peel into ribbons lengthways.

Combine the cabbage, carrot, rocket, mint and onion in a large salad bowl.

DRESSING

Shake the juice, balsamic condiment and oil in a clean glass jar; season to taste.

02.

Just before serving, toss the salad with the Dressing in a large bowl with clean hands to avoid bruising the leaves.
