Warm your insides with a fragrant, stew-like bowl of black beans and cheese that can go with virtually any protein or carb of your choice. Yum.

  • 50 ml golden tequila (optional)
  • 2 spring onions
  • ½ bunch of coriander (15 g)
  • 2 x 400 g tins of black beans
  • 80 g feta cheese



Preheat the oven to 200 C. I make these beans using the tray of sticky pork juices (see my Slow-Cooked Pork Belly in Together) for extra flavour and less washing-up.


Remove a spoonful of fat from the tray, then place over a medium-high heat on the hob. Add 50 ml of golden tequila (optional) or water and use a wooden spoon to scrape up all the sticky goodness.


Let the alcohol cook away (if using) while you trim and slice the spring onions. Add them to the tray, then chop and add the coriander, stalks and all.


Pour in both tins of black beans, juice and all, and as soon as they start to bubble, season to perfection, tasting and tweaking. Crumble over the feta cheese, transfer to the oven, and bake for 30 mins, or until thick and delicious.

VEGGIE LOVE If you want to go veggie, simply start with a clean tray and 1 tbsp of olive oil.
