  • 3 peeled russet potatoes
  • 1/2 cup milk
  • dollop of unsalted butter
  • salt
  • freshly ground pepper

Boil a pot of water. Add some salt to the boiling water. “The water should taste like sea water,” says chef Nicole.

Add peeled potatoes to the pot of boiling water, and cover the lid and cook potatoes for 15 mins.

After 15 mins, use a knife to pop through the potatoes. The potatoes are done if the knife goes right through easily.

Transfer the potatoes into the food processor. Add in a dollop of unsalted butter, a pinch of salt, freshly ground black pepper and milk. Then turn on the food processor. Check the consistency of the mashed potatoes every now and then. the texture shouldn’t be too gooey.

Scoop out the mashed potatoes into a bowl and serve.
