The coffee walnut streusel cake is an all-time appropriate recipe that only requires five ingredients. This moist, coffee-infused treat is also topped off with a layer of streusel – lending a complimentary crunch to the otherwise soft and dense dessert.

Ingredients

COFFEE CAKE

  • 1 quantity sour cream coffee cake mixture

WALNUT STREUSEL

  • ⅔ cup (100 g) self-raising flour
  • ⅔ cup (150 g) firmly packed brown sugar
  • 100 g cold butter, chopped
  • 1 cup (120 g) coarsely chopped walnuts, toasted
01.

Preheat the oven to moderate, 180 C (160 C fan-forced). Grease a 20 cm x 30 cm lamington pan; line base and two long sides with baking paper.

02.

Prepare cake as for sour cream coffee cake. Spread mixture into prepared pan.

03.

To make walnut streusel, combine flour and sugar in a medium bowl; rub in butter, using fingertips, until mixture resembles coarse breadcrumbs. Stir in half the walnuts.

04.

Sprinkle walnut streusel on cake mixture in pan. Sprinkle over remaining walnuts. Bake in a moderate oven for about 30 mins.

TIP Suitable to freeze. Not suitable to microwave.
