The heat just got a bit more bearable with these wonderful soft serves. Made entirely of frozen fruit, these ice-cream flavours are completely vegan and come in spectacular pairings of avocado and lime, raspberry and banana, and passionfruit and mango. Plop them on some quality waffle cones or simply have them in a cup to catch the melt!
Ingredients
- 12 ice-cream cones (50 g)
MANGO & PASSIONFRUIT
- 900 g frozen diced mango
- ¼ cup passionfruit pulp
AVOCADO & LIME
- 3 large avocados (960 g), chopped
- ⅓ cup 980 ml) fresh lime juice
- ⅔ cup (105 g) icing sugar, sifted
- 1 tsp finely grated lime rind
BANANA & RASPBERRY
- 800 g over-ripe bananas, chopped
- 200 g fresh raspberries

AVOCADO & LIME
To make avocado and lime soft serve, freeze avocado on a baking-paper-lined tray for at least 6 hrs or overnight. Process frozen avocado, lime juice and sugar until very smooth. Spoon into a piping bag fitted with a star tube. Immediately pipe mixture into ice-cream cones; sprinkle with lime rind to serve. Makes 2½ cups.
BANANA & RASPBERRY
To make banana and raspberry soft serve, freeze banana and raspberries on a baking-paper-lined tray for at least 6 hrs or overnight. Place three-quarters of the frozen raspberries in a food processor; pulse quickly and briefly to roughly crumble.
Freeze crumble until required. Process remaining frozen raspberries and frozen banana until very smooth. Spoon into a piping bag fitted with a star tube. Immediately pipe mixture into ice-cream cones; sprinkle with raspberry crumble to serve. Makes 2½ cups.
TIP You will need to freeze the fruit for the avocado and lime recipe and the banana and raspberry recipe at least 6 hrs or a day ahead. To pipe the soft serve you will need three disposable piping bags and three star tubes. The soft serve mixtures can be stored in the piping bags in the freezer for up to 2 hrs before becoming too firm to pipe.
