Fit these fragrant little mocha cookies into cookie tins and they will make the perfect gift for house visits and festive occasions. The extraordinary blend of chocolate and coffee will render these bite-sized treats utterly addictive – not to mention simplistically elegant on your own coffee table!

Ingredients

  • 150 g butter, softened
  • ¾ cup (165 g) firmly packed brown sugar
  • 1 egg yolk
  • 2 tsps instant coffee granules
  • 1 tbsp hot water
  • 1½ cup (225 g) plain flour
  • 1 tbsp cocoa powder
  • 20 dark chocolate melts

Preheat oven to 180 C (180 C fan-forced). Grease two oven trays, line with baking paper.

Beat butter, sugar, egg yolk and combined coffee and water in small bowl with electric mixer until smooth. Transfer mixture to large bowl, stir in sifted flour and cocoa, in two batches. Knead dough on floured surface until smooth.

Roll level tbsps of mixture into balls, place 5 cm apart on trays, flatten slightly. Press 1 chocolate Melt into centre of each cookie; bake about 12 mins. Cool cookies on trays.
