A sweet and decadent plum tart such as this sure conjures up images of autumn, but that doesn’t mean it’s limited to the season alone. Needing only half an hour to whip up, this breezy recipe makes for a pretty and tasty dessert to help tide through warm weekend afternoons – flexible enough to be served both warm and chilled, with coffee or tea.

  • 1 sheet butter puff pastry
  • 4 medium (330 g) plums, stones removed, sliced
  • ⅓ cup (55 g) icing sugar

Preheat the oven to 180 C (160 C fan-forced). Line an oven tray with baking paper.

Place pastry on prepared tray; stand until thawed. Fold 1cm of the pastry edges over to form a border. Arrange plum slices on pastry; sift over 2 tbsps of the icing sugar.

Bake for about 20 mins or until the pastry is puffed and lightly brown.

Dust with the remaining sifted icing sugar. Serve with vanilla ice-cream, chocolate ice-cream or whipped cream, if desired.

TIP Not suitable to freeze or microwave.
