We love the idea of spooning into a tub, whether it is ice-cream, cookie dough or simply peanut butter. That’s why we’ve come up with this soft and airy chocolate and avocado mouse, held in a small bowl (pot) and flecked with pistachios and dark chocolate. There’s a light and chocolatey treat you’ll keep around.
- 150 g dark chocolate
- 2 large (640 g) avocados
- ⅓ cup (80 ml) maple syrup
- ½ cup (125 ml) pouring cream
- 1 tbsp caster sugar
- 1 tbsp coarsely chopped pistachios
- 50 g finely grated dark chocolate
Melt chocolate in a small bowl over a small saucepan of simmering water.
Cool 5 mins. Process avocados and maple syrup until very smooth, stopping to scrape down side twice during processing. Add cooled melted chocolate; process until combined. Transfer mixture to a large bowl.
Beat cream and sugar in a small bowl with an electric mixer until medium peaks form. Fold cream into chocolate mixture. Spoon mousse into six ½ cup (125 ml) jars or serving glasses. Sprinkle with pistachios and chocolate. Drizzle with extra maple syrup. Serve immediately.
