These bite-sized coconut ice snow balls are actually globules of icing sugar, desiccated coconut and condensed milk packed and rolled together. The light pink and white hues make them gorgeous treats stored in mason or candy jars as gifts and for entertaining.

Ingredients

  • 2 cups icing sugar
  • 4 cups (360 g) desiccated coconut, plus 1/2 cup extra
  • 395 g can sweetened condensed milk
  • 3 drops pink food colouring

Sift icing sugar into a large bowl. Add coconut and condensed milk; stir until well combined. Transfer half the mixture to a separate bowl. Add food colouring to one portion; mix until well combined.

Roll teaspoons of each mixture, separately, into balls. Place on a baking-paper-lined baking tray. Roll in extra coconut. Chill for 1 hr or until firm.

TIP Make snowballs up to 1 week ahead. Cover, then refrigerate. Try tinting the extra coconut with food colouring.
