A lovely plate of this balsamic strawberry and mint salad would pair perfectly with any of your picnic favourites on a hot summer’s day. You’d also find that balsamic vinegar and mint make a divine combination with strawberries – a balance of sweet, tangy and absolute freshness.
- 500 g strawberries, halved
- 2 tbsps icing sugar
- 1 tbsp balsamic vinegar
- ¼ cup loosely packed fresh mint leaves
- ½ cup (140 g) low-fat natural yoghurt
Combine strawberries, icing sugar and vinegar in medium bowl. Cover; refrigerate 20 mins.
Sprinkle mint over strawberries; serve with yoghurt.
