These healthy banana pancakes are the perfect example of culinary instructor Cecilia Hough’s mantra – a healthy lifestyle starts with healthy food.
Instead of plain pancakes, make yours more nutritious by adding bananas. Add a side of fresh fruits in the form of skewers to get your kids excited about the meal and to get them eating more fruits.
Ingredients
- 1 large Egg
- 1/4 cup Plain Flour
- 1/2 cup Milk, low fat or skimmed
- 1 tsp Baking Powder
- 1 ripe Banana
- 2 tsps Sunflower Oil
- 1 tbsp Butter
- 1 apple
- 1 kiwi
- 1 papaya
- 1 orange
- Pinch of salt
Steps
Mash banana in a bowl and add 1 egg, 1/4 cup of milk and 2 tsp of sunflower oil. Mix well.
Sieve 1/2 cup of plain flour, 1/2 tsp of baking powder and a pinch of salt into mixture.
Mix until just combined. Flour should all be incorporated.
Heat pan on low heat and place mixture onto pan. Cook both sides until golden brown.
Cut chunks of apple, orange, kiwi and papaya and skewer.
Plate and serve with butter or honey.
