This healthy twist to the favourite Asian staple is not only tasty and filling, but helps you meet your daily fibre requirement.
- 2 cups Naturel Organic Mixed Brown & Red Rice
- 2 tbsps Naturel Soft Margarine
- 1 onion, finely chopped
- 7 cups vegetable stock (hot)
- ½ cauliflower head, cut into florets
- 1 zucchini, cubed
- ½ cup mozzarella, grated
- ¼ cup parmesan, grated
- ¼ cup parsley, chopped, plus extra to serve
- 1 cup fresh breadcrumbs
- 2 tbsps olive oil
- 1 long red chilli, finely chopped
- 1 garlic clove, finely chopped
In a large heavy-based saucepan, heat Naturel Soft Margarine on medium. Saute onion 3 to 4 mins, until tender. Add Naturel Organic Mixed Brown & Red Rice, stirring for 1 min to coat.
Add 3 cups hot stock, 1 cup at a time, stirring until absorbed (about 20 mins).
Mix in cauliflower and zucchini. Continue to add stock, 1 cup at a time, and stir for 10 to 15 mins.
CHILLI BREADCRUMBS Preheat oven to 200 C. Line oven tray with baking paper, and toss all ingredients together on tray. Season and spread out evenly. Bake 8 to 10 mins until golden and crisp, stirring once.
Stir cheese and parsley through risotto. Set aside, cover 2 mins. Sprinkle with chilli crumbs and extra parsley to serve.
