Whip up this healthy dish for a quick brunch that is nutritious and satisfying!
- 2 cups Naturel Organic Mixed Brown & Red Rice
- 4 tsps Naturel Soft Margarine
- 4 cups chicken stock
- 150 g of roast meat
- ½ cup of mushrooms
- 2 cups of pumpkin, cubed
- ¼ cup dried scallops
- 4 cloves garlic
- 2 slices ginger
- Parsley or Chinese celery
Heat 4 tsps of Naturel Soft Margarine in a wok. Add garlic and ginger when oil is hot, and fry until fragrant or slightly brown.
Add roast meat, mushrooms and dried scallops. Continue to fry for another 2 to 3 mins.
Add Naturel Organic Mixed Brown & Red Rice and pumpkin, and fry for 2 mins. Transfer to rice cooker when done.
Add chicken stock to rice cooker, and set the cooker to setting for brown rice. Do not add any water.
When rice is cooked, garnish with parsley or Chinese celery and serve.
DOMESTIC DIVA TIPS: There’s nothing like a fluffy bowl of rice to pair with our favourite Asian dishes, but white rice is a high GI food that can cause our blood sugar levels to spike suddenly, leaving us feeling sluggish. A healthier alternative is brown rice, where only the outer hull of rice grains are removed after harvesting to retain nutrients. CHEF’S TIP: Instead of discarding your pumpkin seeds when scooping out the insides, why not turn them into a snack? Wash seeds and boil them to soften, toss with Naturel Extra Virgin Olive Oil Spray and bake in a tray in the oven at about 120 C, until golden brown. Season them with salt, pepper and spices.
