A warm and soothing bowl of porridge gets even better when it comes with a shot of nourishment. Whether you’d like something healthful or would like to hasten your healing, this pumpkin multigrain porridge could help you feel better with additions of ginger, pumpkin, dried whitebait, chicken and more, all with a bountiful serving of multigrain rice.

Ingredients

  • 4.7 litres water
  • 3 chicken carcasses (413 g), remove excess fat
  • 20 g ginger, cut into three slices
  • 150 g inner chicken fillets
  • 1½ cups of multigrain rice (200g)
  • 200 g pumpkin, cut into 1.5cm cubes
  • 20 g dried whitebait
  • ½ tsp salt
  • 5 g spring onion, sliced
  • 5 g coriander

Bring 1.2 litres of water to a boil and blanch the chicken carcasses. Discard the water.

Bring 3½ litres of water to a boil in a clean pot.

Place the chicken carcasses and ginger slices in the pot. Boil on high heat for 15 mins.

Turn the heat down to medium-low and continue boiling for 1 hr.

Add chicken fillets into the pot. Cook for 3 mins.

Remove the fillets. Once the meat has cooled, shred and set aside.

Strain and pour 2 litres of the stock into a clean pot. Bring to a boil.

Add the multigrain rice. Boil for 1 hr.

Place the pumpkin and whitebait in the porridge, and boil for 5 mins.

10.

Add the shredded chicken breast and stir. Bring the porridge to a simmering boil.

11.

Season with salt.

12.

Serve hot and garnished with spring onion and coriander.
