Easy to make and full of flavor, Cajun prawns are a great alternative to the usual stir-fried recipes.
Ingredients
- 1 tbsp oil
- 1 red capsicum, seeded, chopped
- 2 cloves garlic, crushed
- 1 chilli padi, chopped
- 1 tsp ground paprika
- 500 g green prawns, peeled, deveined, tails on
- 1 lemon, grated zest, juice
- 1 tbsp chilli sauce
- 50 g baby spinach
- ½ cup parsley leaves, torn
- Cooked brown rice, to serve
Steps

In a large frying pan, heat oil on high. Saute capsicum and garlic, 1 to 2 mins. Add chilli and paprika and cook a further 1 to 2 mins, stirring.

Mix in prawns. Saute 3 to 4 mins, until they almost completely change colour.

Stir zest, juice and sauce through. Cook a further 1 to 2 mins, stirring.

Remove from heat. Toss spinach and parsley through. Serve with rice.
