Leave out the bacon in this gorgeous bacon cauliflower macaroni cheese bake for a wonderful vegetarian dinner option!
- 400 g macaroni
- 300 g cauliflower florets, steamed
- 2 tbsps olive oil
- 6 slices bacon, diced
- 40 g Anchor Unsalted butter
- ¼ cup flour
- 2 cups milk
- ¾ cup dried breadcrumbs
- 1 tbsp thyme
- ½ pack Perfect
- Mozarella Cheese
- Salt and pepper
Cook the macaroni in salted boiling water (follow packet instructions). Drain and set aside. Preheat oven to 200 C.
Meanwhile, place 1 tbsp olive oil in saucepan over medium-high heat. Add bacon, and cook for 2 to 3 mins until brown. Transfer to plate.
Melt butter in saucepan. Add flour and stir for 1 min. Gradually add milk, stirring until smooth. Stir for 5 mins or until the sauce thickens. Stir in 1 cup mozzarella cheese.
Place macaroni into a large bowl. Add cauliflower, cheese sauce, bacon, and season with salt and pepper.
Stir until combined and then spoon into a large baking dish. Top with remaining Perfect Italiano Perfect Bakes cheese.
Toss breadcrumbs with the olive oil and thyme. Finish off by sprinkling them over.
7 Bake for 20 mins or until cheese is melted golden brown.
