Add crunch, texture and fruity sweetness to chocolate muffins with this Chocolate Muffins With Fruits & Nuts recipe. Aside from being really easy to make, these yummy muffins come with nuts, chocolate chips and mixed fruits – in other words, lots of safe-pouring action for your little ones.
- 2 cups All-purpose flour
- ½ cup Cocoa powder
- 2½ Baking powder
- 1 cup castor sugar
- 6 eggs
- 1 cup Unsalted butter
- ½ cup Chopped walnuts
- ½ cup Chocolate chips
- 2 tbsp instant coffee mix
- ½ cup honey
- ½ cup milk
- ¼ cup mixed fruits
Preheat oven to 180 C.
Sieve plain flour, baking powder and baking soda into a bowl, then add castor sugar (dry ingredients).
Separate 6 egg whites and yolks.
Mix butter, egg yolks, melted chocolate, chopped walnuts, milk, mixed fruit.
Over a double boiler, melt chocolate.
Add in dry ingredients and mix into a batter.
Beat 6 egg whites and castor sugar to form meringue.
Mix meringue to muffin batter and well.
Line baking tray with muffin cups and fill with muffin batter and top with mixed fruit.
Bake at 180 C for 20 minutes.
Remove from oven. Cool and serve.
