Learn how to make super cute ice-cream sandwiches with crispy wafers and homemade raspberry ice cream that will surely be the hit of your next party.

Ingredients

  • 80 g packet ice-cream wafer biscuits
  • 600 ml tub thickened cream
  • 125 g punnet raspberries (see tip below)
  • 395 ml can condensed milk

Line a deep 18 x 28 cm slice pan with baking paper, allowing excess to overhang. Cover base with half wafers.

In a large bowl, using an electric mixer, beat cream and condensed milk together, until mixture doubles in volume and forms soft peaks. Fold in raspberries.

Pour mixture over wafers in pan and smooth surface. Top with remaining wafers, arranging them in the same positions as the base. Cover with plastic wrap and freeze overnight.

Using excess baking paper, lift ice-cream slice onto a large chopping board. Using a hot knife, cut into wafer-sized bars, wiping the knife with a hot damp cloth between each cut.
