Perfect for those dreary Sunday mornings or to indulge in a little afternoon snack, cook up this heavenly smooth and tasty cheesy mushroom omelette for your loved ones.

- 1 tbsp olive oil
- 1 cup mozzarella, shredded
- 4 eggs, beaten
- ½ cup button mushrooms, sliced
- ½ cup spring onion, roughly chopped
- Ground white pepper, to season
Heat the olive oil in a small non-stick frying pan. Add in the mushrooms, season with pepper and sauté over a high heat, stirring occasionally for 2-3 mins. Set aside.
Beat eggs in a bowl after seasoning them with pepper.
Add chopped spring onion to mushrooms and mix well.
Heat pan and pour in egg mixture.
Cook for one minute or until just about to set.
Spoon half the mushroom mix over one side of the omelette.
Top off with the cheese and fold the omelette into half.
Cook for a few moments more minutes until the cheese has melted, lift onto a plate and best serve with fries and salad.
Serve and garnish with spring onions.
Tip: You can use meat like beef, chicken, ham, turkey or shrimps. Leftovers too! You may also use different kinds of mushrooms.
