Your classic egg and cheese grilled sandwich but made heartier and healthier. We included spinach for a dash of fibre and finished it in a sandwich press for the perfect sear.

Ingredients

  • 2 eggs
  • ½ cup (60 g) coarsely grated cheddar cheese
  • 30 g baby spinach leaves
  • 4 slice (180 g) wholemeal bread

Cook eggs in oiled medium frying pan until egg whites are set. Turn eggs over and cook until yolks are barely set.

Meanwhile, pre-heat sandwich press. Sandwich egg, cheese and spinach between bread slices.

Toast in sandwich press until golden brown.

TIP To mix things up a little, substitute tortilla for the bread, roll it up and toast in the sandwich press. Cut them into smaller sizes for a delicious snack.
