Cook up healthy and delicious fried chicken with a spiced sauce using this simple recipe!
- 5 chicken thighs
- 300 ml coconut milk
- 3 tbsps sugar
- (blend into a paste using Philips Kitchen Machine)
- 2 cm ginger
- 2 cm galangal
- 4 stalks lemon grass
- 1 tsp salt
- 4 red chillies
- 5 shallots
- 2 cloves garlic
Stir coconut milk and sugar into the marinade. Rub half the amount of marinade onto chicken. Set aside for 20 mins, turning the chicken over every 10 mins. Set aside remaining marinade to use as sauce.
Preheat the Airfryer at 200 C. Put chicken into the basket and slide into the Airfryer. Set the timer for 10 mins. Cook until the timer rings and the chicken is lightly brown.
Adjust the temperature to 150 C and set the timer for another 10 mins to cook the chicken through.
Meanwhile, prepare the sauce by cooking remaining marinade in a small pan until it thickens.
Pour sauce over and around chicken and serve at once.
