- 500 g lamb mince
- ¹⁄³ cup Moroccan spice paste
- 1 tbsp oil
- 4 wholemeal rolls
- 4 char-grilled eggplant, sliced
- 4 chargrilled capsicum, sliced
- ½ cup mint leaves
- Tzatziki or mayonnaise, to serve
Mix lamb mince with Moroccan spice paste and shape into 4 even patties.
Heat oil in frying pan on high and cook patties 10 to12 mins, turning.
Fill the wholemeal rolls with char-grilled eggplant and chargrilled capsicum slices, ½ cup mint leaves and patties.
Finish with tzatziki or use mayonnaise.
