Ingredients

  • 500 g lamb mince
  • ¹⁄³ cup Moroccan spice paste
  • 1 tbsp oil
  • 4 wholemeal rolls
  • 4 char-grilled eggplant, sliced
  • 4 chargrilled capsicum, sliced
  • ½ cup mint leaves
  • Tzatziki or mayonnaise, to serve

Mix lamb mince with Moroccan spice paste and shape into 4 even patties.

Heat oil in frying pan on high and cook patties 10 to12 mins, turning.

Fill the wholemeal rolls with char-grilled eggplant and chargrilled capsicum slices, ½ cup mint leaves and patties.

04.

Finish with tzatziki or use mayonnaise.
