Put a sweeter twist on the classic ploughman’s pie with this hearty parmesan apple crumble!
- For crumble:
- 50 g parmesan cheese
- 2 cups all-purpose flour
- ¾ cup brown sugar
- 200 g unsalted butter, cubed
- 1 tsp vanilla extract
For apple filling:
- 8 medium-sized apples, peeled and sliced
- ¼ cup brown sugar
- 1 tsp nutmeg
- 2 tsps cinnamon
Preheat oven to 180°C.
Place flour, sugar and parmesan cheese in a large bowl and mix well. Add softened butter cubes and vanilla extract.
Use hands to rub everything together until mixture becomes crumbly in texture. For filling, place sliced apples in a large bowl and sprinkle over sugar, nutmeg and cinnamon. Stir together.
Spread the apple filling evenly at the bottom of a baking dish. Add crumble on top. Sprinkle with more parmesan cheese.
Bake in oven for about 30 mins or until crumble is golden.
Serve with a scoop of vanilla ice-cream!
