Stun the crowd with this luxurious Shoganai cocktail, complete with a platter of oysters on a bed of ice at any occasion. All you need are a few ingredients you probably already have in your kitchen, as well as some fresh oysters (prepared the old-fashioned way) with the drink.
- 1 cup white (granulated) sugar
- ½ cup water
- 6 cm freshly peeled ginger, cut into 5 mm slices
- ⅓ cup lime juice
- 2 cups vodka
- 2 x (750 ml) sparkling wine
Combine sugar and water in a small saucepan. Add ginger to pan; stir over medium heat, without boiling, until sugar dissolves. Bring to the boil; boil for 5 mins. Transfer to a heatproof jug; cool. Add lime juice and vodka to jug; cover and refrigerate until ready to use.
Pour 2 tbsps of the ginger vodka mixture into 8 chilled glasses; add a couple of pieces of the cooked ginger and a few slices of lime.
Just before serving, fill glasses with two 750 ml bottles of chilled sparkling wine. Serve cocktail with oysters on a bed of ice.
